Sugar Cookies and Buttercream Frosting

Sugar Cookies

1 1/2 cups shortening
2 3/4 cups sugar
8 cups flour
4 teaspoons baking powder
4 eggs
1 cup milk
1 teaspoon salt
4 teaspoons vanilla

Cream together the shortening and the sugar. Add the rest of the ingredients and mix well. Roll out until 1/8-1/4" thick and cut into desired shapes. Bake at 400 degrees for 6 minutes. Makes about 100 cookies.


Buttercream Frosting (from Wilton's Cake Decorating Guide)

1/2 cup shortening
1/2 cup butter softened
4 cups powdered sugar
2 tablespoons milk or water
1 teaspoon vanilla

Cream together the shortening and butter. Add the rest of the ingredients and mix well. Add food coloring if desired.

The Scores Are In

After a long three weeks of waiting, Josh finally got his LSAT scores back. He received a 163 out of 180! Now that he knows what his score is, he is beginning to look into different law schools and trying to decide for sure where he wants to apply. Who knows where we will be in a year...

Bobcat

Today at work, animal control was dispatched out on a baby bobcat. We figured it would most likely turn out to be a wild cat, but it really was a bobcat! The animal control officer brought it into dispatch so we could see it.
