Ham Meatballs

This is a recipe I got from one of Josh's coworkers. She said you have to get the ground ham from the meat counter - I usually use ground pork, which is already packaged and ready to go.

Meatballs:
1 pound ground ham
1 cup bread crumbs
½ cup milk
½ teaspoon garlic salt
¼ teaspoon pepper
1 egg, slightly beaten

Sauce:
¼ cup rice vinegar
1 can pineapple chunks
1 teaspoon powdered mustard
1 cup brown sugar

Mix first set of ingredients together. Grease a 9x13” baking dish. Form ham mixture into walnut size balls. Place in baking dish. Heat vinegar, juice from canned pineapple, powdered mustard and brown sugar in sauce pan. Pour sauce over ham and add pineapple chunks. Bake at 325 degrees for an hour to an hour and a half. Baste the meat balls with sauce once or twice during cooking time.

Josh's Big Day

On Friday, Josh had laser eye surgery. He didn't qualify for Lasik because his corneas are too thin, so he had PRK instead. It is more painful and has a longer healing process because they have to burn off the outer layer of the eye with industrial strength chemicals. I couldn't be in the room while they did the surgery, but was able to watch it on a TV they had set up in the next room. Josh is still in a lot of pain and can't wait until his eyes have healed. He says it feels like he has his contact in backwards, has something in his contact, or someone has poked him in the eye. They say you should plan on about 3-5 days of miserable pain before being able to return to light daily activities.

and gave him these sunglasses because the surgery causes sensitivity to light

Guitar Hero

Josh and I went to a baby blessing for his cousin's daughter this past Sunday. I neglected to take pictures of the baby, but managed to get a couple of us after church playing guitar hero with everyone. It was our first experience with the game, and now we understand the addiction!
