Tater-Topped Casserole

This is another recipe I found on http://www.recipezaar.com/ that I really enjoy.

1 pound ground beef
1 small onion, chopped
1 (10¾ oz) can cream of mushroom soup
¼ cup milk
1 cup frozen mixed vegetables
1 cup shredded cheddar cheese
1 pound frozen potato nuggets

Preheat oven to 375 degrees. Brown the meat and onions in a skillet, stirring occasionally; drain. Spoon into an 8”x8” baking dish. Mix soup and milk; pour over meat mixture. Top with layers of mixed vegetables, cheese and potatoes. Bake for 45 minutes or until potatoes are golden brown and casserole is heated through.

Baby Blanket

I have been busy lately making several baby blankets. It seems like everyone I know is pregnant. Here is one I finished a couple weeks ago.

My Birthday

This past Monday Josh and I celebrated my birthday. We went out to Olive Garden for dinner, and had cheesecake later that night. Josh gave me season 4 of The Office on DVD...
and these running shoes!

Hobble Creek Half Marathon

Back in May Josh and I decided to sign up for the Hobble Creek half marathon. Neither of us had ever participated in a race before and thought it would be a good place to start. I began training immediately but built up my distance too quickly and ended up pulling a tendon in my ankle. I was pretty bummed because I couldn't run for a month while my ankle healed. Josh didn't train very much because his brother let him borrow his road bike so most of his free time was spent riding his bike instead of running. By the time the day of the half marathon rolled around neither one of us felt prepared, but we did it anyway. We ran the first 4 miles together, then I couldn't keep up with Josh so he took off ahead of me. Josh crossed the finish line at 1:57:10 and I crossed at 2:06:22. We both ran the whole way and finished under our time goals.
