Potato, Cheese and Broccoli Soup

This is a recipe I got from my mother-in-law.

7 white potatoes, peeled and cubed (about 1/2“cubes)
1 yellow onion, diced
3 stalks celery, sliced
1 stalk broccoli, chopped
12 oz velveta cheese
8 oz grated sharp cheddar cheese
1 can evaporated milk
salt
garlic salt
pepper


Place potatoes, onion and celery in a large pot and cover with water. Add some salt and boil for about 30 minutes. Turn heat to low and add broccoli. Stir in evaporated milk, velveta cheese, and sharp cheese. Stir frequently, until cheeses have melted. Season with garlic salt and pepper.

Christmas Tree

I was lucky enough to be given a Christmas tree this year by my mother in law. She has decided to get a new Christmas tree and gave me her old one which I LOVE. I purchased some simple decorations and got it all put together this past week. I really like how it turned out.

Dinner With Jenny

I was lucky enough to get Thanksgiving off from work, so I flew home to spend it with my family. Unfortunately, Josh was not able to come with me because he only has one week left of class then finals. We figured it would be best for him to stay so he could get some studying done. On Tuesday night, I went out to dinner with my good friend Jenny. It was a lot of fun to catch up and spend time together again.

Bangs

I have been debating for a while whether or not to cut some bangs. I haven't had bangs since the 5th grade and was wanting a change. While I was home for Thanksgiving, I had my sister Lindsay cut some bangs for me. I really like how it turned out!

Dana Point Turkey Trot

On Thanksgiving day my sister Michelle and I ran the Dana Point 5k Turkey Trot. As we headed down to Dana Point it was POURING RAIN! We were a little worried and found a grocery store so I could buy a poncho. We ran into one of Michelle's friends who ran the 10k earlier. He said it felt like he was running in a river! My shoes were soaking wet, but luckily the rest of me stayed dry with the poncho. The rain let up just in time for the 5k to start and I ended up throwing my poncho off to the side of the road before we started. The road was slick, but I was able to finish 21st out of 190 in my age group with a time of 26:06. I was hoping for a better time, but for my first 5k it wasn't bad.
