Here is a recipe I got from Josh's cousin's wife. I made them a couple weeks ago and they are delicious!
1/2 cup butter, softened
3/4 cup sugar
1 egg
1/2 cup plain yogurt or sour cream
3/4 cup milk
1 teaspoon vanilla
2 cups flour
1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cups fresh or frozen raspberries
Streusel Topping:
1/4 cup flour
1/3 cup oats
3 tablespoons sugar
1/4 teaspoon cinnamon
1/8 teaspoon salt
3 tablespoons cold butter
Preheat oven to 400 degrees. In a mixing bowl, cream butter and sugar until light and fluffy; beat in the egg. In a small bowl mix yogurt (or sour cream), milk and vanilla. Combine dry ingredients in another bowl. Alternately stir dry and wet ingredients into the creamed mixture until just moistened. Gently fold in berries. Fill greased of paper-lined muffin cups 2/3 full. Make the
streusel topping by adding dry ingredients together, mix. Cut in butter. Sprinkle over muffins. Bake for 18-22 minutes or until they test done. Cool in pan 10 minutes before removing.
