Shark Week

Discovery Channel's annual shark week starts on Sunday. It is something I look forward to every year. I don't know why, but sharks have always intrigued me. Get ready for shark week by testing your knowledge about sharks by taking the quiz on the website below.

Now That's Talent!!!

When Josh was in junior high he started learning the art of carpentry. It is one of the many things I admire about him. Here is one of the first things he made.

Crock Pot Enchiladas

1 pound ground beef
10 (6 inch) corn tortillas, quartered
1 (1 oz) package taco seasoning mix
1¼ cups water
1 (12 oz) jar chunky salsa
1 can cream of mushroom soup
1 can cream of chicken soup
4 cups shredded Mexican cheese blend
1 small can sliced olives

Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add taco seasoning and water; simmer for 15 minutes over low heat. In a medium bowl, stir together the salsa, cream of mushroom soup, cream of chicken soup, and half of the olives. Mix in most of the cheese, reserving ¾ cup for later.

Place a layer of tortillas covering the bottom of a crock pot. Scoop a layer of the ground beef over that, and then spoon a layer of the cheese mixture on top. Repeat the layers until you run out of stuff, ending with a layer of tortillas on top. Top with remaining cheese and olives. Cover and cook on high for 2 hours.

Keira - not to be confused with Kayla

Josh's family has a dog named Keira. She is cute and very playful. The problem here is that our names are so similar, they get interchanged all the time. One time I went into the kitchen to get something and Josh asked his brother Alex where "Kayla" went. Alex's answer..."Oh, I put her outside" thinking he had said Keira. I don't really mind. When I am at work and answer the phone I get called Keira all the time.

Josh's Graduation Present

Josh finally got his graduation present - a 12 gauge Benelli shotgun. He has been waiting for his concealed firearms permit to come in the mail (so we wouldn't have to pay the $7.50 background check fee) and it finally came on Thursday. He picked up the gun on his lunch break yesterday and was very excited he finally had it.

Josh loves that I got a digital camera for Christmas and that I have a blog - all the more reason for me to take pictures. He loves having his picture taken. (Thank goodness he doesn't have any shotgun shells for this gun yet...)
